Horse Heaven Hills
The 2016 started out very much like 2015 with an unusually warm winter and early spring that led to the earliest bloom on record. By mid-May we estimated we were a good 2 weeks ahead of average. By June the temperatures cooled to our usual range and by September we cooled significantly with occasional (and unusual) showers. Ripening progressed beautifully! Harvest of Cabernet Sauvignon grapes began on September 20th on Phinny Hill, followed by Gunselman Bench on September 22nd and October 3rd and finished with McKinley Springs on October 11th. Although these wines exhibit lush ripeness, the backbone of acidity creates a wine with great aging potential.
Our flagship Cabernet Sauvignon is luxurious and elegant with a nose of dark cherry, vanilla, black current and cassis. On the palate the full-bodied richness is expressed with dark red and black fruits, wood smoke, mocha and a hint of anise that flows to well integrated silky tannins. This wine will benefit from a few years in the cellar and should last for a decade or more.
The 2016 Horse Heaven Hills Cabernet Sauvignon is 100% Cabernet Sauvignon. The fruit was sourced from our vines on Gunselman Bench, McKinley Springs and Phinny Hill vineyards. It was aged in 100% French, 50% new for 21 months. The alcohol by volume is 13.5%, 300 cases produced, bottled July 2018.
